Recipe idea: Rocky Road Bites

Ingredients

  • 125g soft unsalted butter
  • 300g dark chocolate pieces
  • 3tbsp golden syrup
  • 100g mini marshmallows
  • 200g rich tea biscuits

Method

  1. Heat the butter, chocolate and golden syrup in a saucepan over a low heat. Remove from the heat, scoop out 125ml of the mixture and set aside in a bowl
  2. Place the biscuits in a freezer bag and crush them with a rolling pin until they start to crumble, with some biscuit pieces remaining
  3. Fold the biscuits / crumbs into the pan of melted chocolate mixture and add in marshmallows
  4. Tip the mixture into a baking tin and spread evenly with a wet spatula
  5. Pour over the remaining 125ml of melted chocolate mix and smooth out with a spatula
  6. Place in the fridge for at least two hours
  7. Cut into 24 slices and dust with icing sugar
