Recipe idea: Rocky Road Bites
Ingredients
- 125g soft unsalted butter
- 300g dark chocolate pieces
- 3tbsp golden syrup
- 100g mini marshmallows
- 200g rich tea biscuits
Method
- Heat the butter, chocolate and golden syrup in a saucepan over a low heat. Remove from the heat, scoop out 125ml of the mixture and set aside in a bowl
- Place the biscuits in a freezer bag and crush them with a rolling pin until they start to crumble, with some biscuit pieces remaining
- Fold the biscuits / crumbs into the pan of melted chocolate mixture and add in marshmallows
- Tip the mixture into a baking tin and spread evenly with a wet spatula
- Pour over the remaining 125ml of melted chocolate mix and smooth out with a spatula
- Place in the fridge for at least two hours
- Cut into 24 slices and dust with icing sugar
