Recipe idea: Penne Primavera
Ingredients
Serves 5 - 6
- 250g penne pasta (or whichever pasta you prefer)
- 2tsp of oil
- 2 cloves of garlic, minced
- 50g red onion, chopped
- 75g carrots
- 75g mushrooms, chopped
- 75g roasted red peppers
- 150g broccoli
- 1 cooked chicken breast, diced
- 200g tinned diced tomatoes
- 50g green peas
- 125ml stock
- Salt and pepper (optional)
Method
- Cook the pasta following the instructions on the package, drain and set aside
- Heat the oil in a large frying pan on a medium- high heat
- Add the garlic and onions and cook for approx. 3 minutes until the onions soften
- Add in the broccoli, carrots and mushrooms, cook for an additional 3 minutes, until the mushrooms soften
- Add the chicken, tomatoes, red pepper and stock and bring to a simmer
- Stir in the peas and pasta and cook for another 2 minutes to heat. Season with salt and pepper (optional) and add basil (optional)
Alternative options
- Remove the chicken to make this a vegetarian dish
- You can change the vegetables to other ones you prefer
