Recipe idea: Penne Primavera

Ingredients

Serves 5 - 6

  • 250g penne pasta (or whichever pasta you prefer)
  • 2tsp of oil
  • 2 cloves of garlic, minced
  • 50g red onion, chopped
  • 75g carrots
  • 75g mushrooms, chopped
  • 75g roasted red peppers
  • 150g broccoli
  • 1 cooked chicken breast, diced
  • 200g tinned diced tomatoes
  • 50g green peas
  • 125ml stock
  • Salt and pepper (optional)

Method

  1. Cook the pasta following the instructions on the package, drain and set aside
  2. Heat the oil in a large frying pan on a medium- high heat
  3. Add the garlic and onions and cook for approx. 3 minutes until the onions soften
  4. Add in the broccoli, carrots and mushrooms, cook for an additional 3 minutes, until the mushrooms soften
  5. Add the chicken, tomatoes, red pepper and stock and bring to a simmer
  6. Stir in the peas and pasta and cook for another 2 minutes to heat. Season with salt and pepper (optional) and add basil (optional)

Alternative options

  • Remove the chicken to make this a vegetarian dish
  • You can change the vegetables to other ones you prefer
